Poilâne bread directly from Paris

Every trip to Paris always includes a quick stop at our favorite bakery Poilâne located on 8 rue du Cherche-Midi in the artsy Saint-Germain-des-Prés district. This bakery shop has been there since 1932 and they make a Poilâne signature loaf that is absolutely delicious. Many restaurants in the area have on their menu items on which this bread is based. It is a favorite of many including ourselves. Of course CloClo said one day while standing in the bakery “I am going to throw one in my luggage and take it home to Texas”. Of course I protested at first, worried about US customs officials at the airport, but she always wins and we decided to try it by asking for a certificate in English with the ingredients listed for the officials at the airport.

Upon arrival at Bush International Airport we showed the certificate and the bread and to our surprise there was no problem importing this loaf. 

This was the start of our bread story, from then on our customers started ordering for special occasions this bread through us by making combined orders which is of course more cost effective. 

The loaf is made of 4 ingredients: sourdough, stoneground wheat flour, water and sea salt from Guérande (this is the wet sea salt harvested by hand from the West Coast of France). It is a round loaf with a thick, golden crust as it is cooked in a wood-burning oven. It carries the Signature mark “P” for Poilâne. 

Each loaf weighs about 4lbs or 1.9kg (weight may very as each loaf is handcrafted). Well suited with meats, soft cheeses as well as foie gras or salmon. The size of the slices makes it good bread for sandwiches. We usually cut some of the loaf for immediate consumption (the best way to keep the bread is to wrap in a cloth, preferably linen) The bread keeps good for 5 days after baking after that, we advise to toast it. We also cut some in large pieces and freeze. We then toast them in the future.
